Victoria Day Trifle Recipe
Victoria Day and the long weekend are almost here! We will be off to Centreville to go to the Sick Kids Teddy Bear Picnic as well as fireworks at Canada’s Wonderland.
As for the menu, in our family, I am known for my trifle and Victoria Day is the perfect time to make it. We usually decorate it with little flags and I saw this lovely shot here.
It’s so easy to do, you just need pound cake (you can use store bought or home-made), one cup of Triple Fruit jam mixed together with two cups of fresh berries (I like strawberries, raspberries, blueberries and blackberries but you can use any combination), custard (home-made or Bird’s) and whipped cream (this should be real cream, not from a spray can – just whip and sweeten to taste).
Layer half the cake, then half the berries and jam, half the custard and half the cream in a pretty clear glass bowl. Repeat again and add a small pile of the berries on top to decorate.
If you do add flags to the trifle, this year you could change the flags to pink to celebrate the birth of Princess Charlotte as well to make it a dual celebration!
